Terroir

Encircled by the emblematic rock of Solutré and Vergisson, Domaine Barraud is situated in a village classified as Grand Site de France - Great Sights of France . Nestled in an ancient lagoon backed by the Morvan, the site's rocks are constituted by ancient Coralien reefs.
Three great soil types can be distinguished: chalk slopes, limestone and variegated clay. Each soil type requires particular attention and specific cultivation. Domaine Barraud maintains its terroir so that it can best express its richness and diversity.

Terroir

The Vines

Cultivated artisanally, inspired by organic agriculture, the domaine's vines are worked with care. The Guyot-Poussard pruning allows the plants' sap to flow freely.
Respecting the vines and the soil, treatments are simply based on sulfur and copper sulfate. In the old vines as well as the younger, labouring is done by hand.
In order to obtain the most healthy and wholesome grape possible, harvesting is done by hand, limiting oxidation.

The Vines

Vinification and Maturing

In order to preserve the stems and the grapeseeds, Domaine Barraud has installed a pneumatic press. The must is then placed in a thermoregulated stainless steel tank to settle all night long.
The next day, the clear juice is moved into barrels using gravity. The alcoholic and malolactic fermentations take place in the barrels without any additional yeast.
Matured 10-14 months depending on the cuvée, with time the wine develops incomparable aromas. Once ready, it is racked and placed in a stainless steel tank. After a light fining, the wine is bottled by the domaine, with or without filtering.
